Ingredients
1/2 cup plain yogurt
1/4 cup finely chopped cucumber
1/2 teaspoon dried dill weed
1/4 teaspoon dried mint, crushed
4 large pita bread rounds
4 lettuce leaves
6 ounces thinly sliced fully cooked deli chicken breast
1 small tomato, thinly sliced
1/3 cup crumbled reduced fat feta cheese
Directions
For dressing: In a small mixing bowl stir together yogurt, cucumber, dill weed, and mint. Set aside. For Sandwich: Place a pita bread round on a plate. Top with lettuce, chicken, tomato, and feta cheese. Spoon dressing on top. Roll up the pita bread. Secure with wooden toothpicks. Serve immediately.

Ingredients
1 cup buttermilk
3/4 cup corn meal
1/4 cup flour
1/2 teaspoon soda
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon sugar
1/4 cup egg substitute
Directions
Blend or mix well until smooth. Pour in a number 5 skillet that has been sprayed with vegetable oil spray and preheated (be sure it’s very hot). Bake at 400

Ingredients
Nonstick cooking spray
4 boneless, skinless chicken breast halves
3/4 cup Natural Apple Juice
Juice from 1 lime
2 tsp cornstarch
1 tsp Chicken Flavor Instant Bouillon
Directions
Spray large, nonstick pan with nonstick cooking spray.
Cook chicken, turning once, for 8 to 10 minutes or until no longer pink in center. Remove from pan and keep warm.
Combine Apple Juice, lime juice, cornstarch and bouillon in small bowl.
Add to skillet; cook, stirring occasionally, until thick. Spoon sauce over chicken to serve.
